Fermented tofu, also known as *furu* or *doufuru*, is a preserved Chinese condiment made by fermenting fresh tofu in a brine of rice wine, salt, and spices. Its origins trace back to the Wei dynasty, where it was developed as a method to preserve tofu in regions without refrigeration. The process involves air-drying tofu cubes, allowing mold to develop, then submerging them in the brine for several months. Key ingredients include firm tofu, salt, rice wine or grain alcohol, and seasonings such as chili, sesame oil, or fermented red rice for color.
A great version is distinguished by its creamy, spreadable texture and a complex umami flavor that balances saltiness with subtle sweetness and a hint of alcohol.
