La storia
Battuta di Costata con Melanzane e Timo is a contemporary Italian beef tartare dish that elevates the classic *battuta* (hand-chopped raw beef) with the smoky depth of grilled eggplant and the aromatic lift of fresh thyme. The dish originates from the culinary traditions of northern Italy, where *battuta di manzo* is a Piedmontese specialty, but this version incorporates southern Mediterranean influences through the use of melanzane (eggplant).
The dish is built around a high-quality ribeye or sirloin (*costata*), which is hand-chopped rather than ground to preserve texture. The beef is seasoned simply with olive oil, salt, and pepper, then paired with charred, diced eggplant that has been grilled until tender and smoky. Fresh thyme leaves are scattered throughout, adding an herbal brightness that cuts through the richness of the meat. A great version is distinguished by the quality of the beef—ideally grass-fed and well-marbled—and the precision of the chop, which should yield a tender but not mushy consistency. The eggplant must be grilled to achieve a deep char without becoming bitter, and the thyme should be used sparingly to complement rather than overpower.
Regional variations may include the addition of capers, red onion, or a splash of balsamic vinegar, though the core combination of beef and eggplant remains central. In Castelbuono, Italy, the dish is notably served at **Il Palazzaccio**, a venue praised by *Where The Foodies Go* for its refined take on Sicilian-tinged Italian classics. There, the battuta is presented as a starter, often accompanied by crostini or shaved pecorino, showcasing the restaurant’s commitment to local ingredients and precise technique.

Un ristorante fantastico a Castelbuono dove abbiamo mangiato un pranzo incredibile con ingredienti freschissimi e locali e piatti eccellenti come il tortino di tenerumi, il manzo gravlax e il raviolo al tartufo.
