The story
Trippa con Funghetti is a rustic Italian dish that combines tender tripe (the lining of a cow’s stomach) with small, earthy mushrooms, typically simmered in a rich tomato-based sauce. Its origins lie in the cucina povera (poor kitchen) traditions of central and northern Italy, where offal and foraged mushrooms were transformed into hearty, economical meals. The dish is particularly associated with mountainous regions like the Alps, where both ingredients were historically abundant.
Key ingredients include honeycomb tripe, cleaned and parboiled until tender, mixed with a variety of small mushrooms such as chanterelles or porcini. The sauce is built from olive oil, garlic, white wine, tomatoes, and often a splash of vinegar to cut the richness. A great version is distinguished by the tripe’s perfect texture—tender but still offering a slight chew—and a deeply savory, umami-packed sauce where the mushrooms’ earthiness complements the tripe’s mild flavor. Fresh herbs like parsley or rosemary provide a bright finish.
Regional variations exist across Italy. In Tuscany, the dish may include a pinch of chili for heat, while in Piedmont, it is sometimes enriched with a grating of aged cheese. A notable rendition is served at Rifugio dell’Alpino in Belvedere, Italy, a venue praised by the food community *Where The Foodies Go* for its authentic alpine take on the classic. There, the dish reflects the local tradition of pairing offal with wild mushrooms foraged from the surrounding forests.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
