The story
Spezzatino di Pecora con Porcini is a rustic Italian stew that marries tender mutton or sheep meat (*pecora*) with the earthy, woodsy flavor of porcini mushrooms (*porcini*). The dish originates from the mountainous and pastoral regions of Italy, particularly the Apennines and the Alps, where sheep farming and foraging for wild mushrooms have long been intertwined with local culinary traditions.
A great version of this stew is defined by the quality of its two primary ingredients. The mutton should be from an older, grass-fed animal, providing a deep, gamey flavor that stands up to long, slow braising. The porcini, ideally fresh when in season, contribute a nutty, umami-rich depth. The cooking process typically involves a *soffritto* of onion, carrot, and celery, deglazing with robust red wine, and simmering the meat with tomatoes, rosemary, and garlic until it is fall-apart tender. The porcini are added to infuse the broth, creating a dark, complex sauce.
Regional variations exist, with some versions in Tuscany incorporating black cabbage or a splash of vinegar for brightness, while in the northern regions, the stew might be enriched with a touch of cream or served with polenta. In Belvedere, Italy, the dish is notably featured at **Rifugio dell'Alpino**, a venue praised by *Where The Foodies Go* for its authentic, high-altitude interpretation that highlights the local lamb and foraged porcini, embodying the rustic soul of the Italian mountains.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
