The story

Polenta con Funghi is a rustic Northern Italian dish consisting of slow-cooked cornmeal polenta topped with sautéed wild mushrooms. Its origins lie in the Alpine regions of Lombardy, Piedmont, and Trentino, where polenta was a staple of peasant cuisine and foraged fungi provided essential flavor. The dish is traditionally associated with autumn, when porcini mushrooms are at their peak.

Key ingredients include coarse yellow cornmeal, water, salt, and a medley of mushrooms—most commonly porcini (Boletus edulis), but also chanterelles, morels, or cremini. The polenta is stirred continuously until thick and creamy, then finished with butter and Parmigiano-Reggiano. The mushrooms are typically sautéed in olive oil or butter with garlic, fresh herbs like rosemary or thyme, and a splash of white wine or vegetable broth.

A great version is distinguished by the texture of the polenta—smooth and velvety, never lumpy or stiff—and the depth of the mushroom sauce, which should be earthy and rich without being greasy. The dish is often finished with a drizzle of high-quality extra-virgin olive oil and shaved cheese.

Regional variations abound. In Veneto, polenta is often served softer, almost porridge-like, while in Lombardy it may be allowed to cool and solidify before being sliced and grilled. Some versions incorporate truffle oil or fresh truffle shavings for added luxury. At Rifugio dell'Alpino in Belvedere, Italy, the dish is prepared in the traditional Alpine style, emphasizing locally foraged porcini and a slow-cooked, creamy polenta, as highlighted by the travel series *Where The Foodies Go*.

  • Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
