The story
Patate e Formaggio, meaning “potatoes and cheese,” is a simple yet deeply satisfying dish from the Sicilian town of Nicolosi, Italy. Its origins lie in the cucina povera tradition, where humble ingredients are transformed through careful cooking. The dish consists of thinly sliced potatoes layered with cheese—typically a semi-soft variety like provola or scamorza—and baked until the potatoes are tender and the cheese is melted and golden. At the venue Maria Luisa in Nicolosi, as highlighted by the food creators Frama Twins, the dish is prepared with local potatoes and a generous amount of cheese, achieving a balance of creamy interior and crispy, browned edges. What distinguishes a great version is the texture: the potatoes must be cooked through without becoming mushy, and the cheese should form a lacy, slightly charred crust on top. Regional variations across Italy can include the addition of mozzarella for extra stretch, pecorino for sharpness, or even a sprinkle of breadcrumbs for crunch. In Nicolosi, the focus remains on the purity of the two main ingredients, allowing their flavors to shine. The dish is often served as a side to grilled meats or as a hearty vegetarian main, and its popularity has spread beyond Sicily thanks to food content like that from the Frama Twins, who documented the authentic preparation at Maria Luisa.

Highlights from 2 creator reviews of Patate e Formaggio.
At Dar Bottarolo in Rieti, we had an all-you-can-eat Roman meal for an incredibly low price. Despite mixed reviews, we were pleasantly surprised: the fried snacks were excellent, the gricia and carbonara well-executed, and the amatriciana and ribs good, with minor flaws like acidity and excess wine. Great value.
Maria Luisa is a great all-you-can-eat apericena buffet in Catania with good quality food, fresh ingredients, and a festive atmosphere — definitely worth the €20 plus cover charge.
