The story
Lattaiolo is a traditional Italian dessert most closely associated with the Casentino region of Tuscany, particularly the town of Bibbiena. It is a simple, baked custard-like pudding made primarily from milk, eggs, sugar, and lemon zest, often thickened with a small amount of flour or fine breadcrumbs. The name derives from *latte* (milk), reflecting its core ingredient. Unlike crème caramel, lattaiolo does not typically include a separate caramel sauce, though some versions develop a lightly caramelized surface during baking.
A great version of lattaiolo is distinguished by its silky, creamy texture and a delicate balance of sweetness and citrus fragrance. The best examples have a firm but tender set that slices cleanly, and a pale golden top free of browning or cracks. The dessert should taste purely of fresh milk and lemon, without being cloying.
Regional variations exist across Tuscany and beyond. In some areas, bakers add vanilla or cinnamon, while others incorporate a layer of chocolate or fruit preserves. Some recipes replace wheat flour with cornstarch for a gluten-free option. In Bibbiena, the dish is praised by Sentieri Golosi for its authenticity at the venue Il Tirabusciò, where it appears as a classic example of the local pastoral tradition. Lattaiolo is typically served at room temperature or slightly chilled, often as a simple finish to a meal, and remains a beloved symbol of the Casentino valley's rustic culinary heritage.

A very interesting and elegant place with dishes made very tastefully, more particular dishes; we personally liked everything, with the trout tartare and the duck ragù pici being the stars of the day, and the triple chocolate dessert being one of the best chocolate desserts I've eaten in Italy.
