The story
Capesante, known internationally as scallops, is a highly regarded seafood delicacy prized for its delicate texture and natural sweetness. While the dish has roots in various coastal culinary traditions, it has gained significant acclaim in high-end dining hubs across the globe.
The dish typically consists of the adductor muscle of the scallop, often prepared by pan-searing to create a caramelized crust while maintaining a tender, translucent center. Key ingredients often include butter, garlic, and white wine, though modern interpretations may incorporate citrus or seasonal vegetables. A great version of Capesante is distinguished by the perfect balance of a golden-brown exterior and a succulent, buttery interior, avoiding any rubbery texture.
Regional variations and notable culinary venues highlight the dish's versatility. In Milano, Italy, MIsushi Restaurant has been recognized by Giovanni Fois for its execution. In France, the legendary Les Grands Buffets in Narbonne has become a destination for connoisseurs seeking premium seafood, as noted by *Where The Foodies Go*. Furthermore, in Shinagawa City, Japan, Choshimaru has earned praise from creator Franchino Er Criminale for its unique presentation. Whether served in a French bistro or a Japanese sushi establishment, Capesante remains a cornerstone of fine dining.

Les Grands Buffets is an incredible all-you-can-eat French luxury buffet in Narbonne, with amazing quality, huge variety, and a magical setting, all for an unbelievable price of €52.29 per person.
A national chain originally from somewhere in the Kanto region, this suburban Tokyo location is frequented only by locals — we were the only foreigners. The sushi is more mid-range compared to Toyama, but still very good, especially for a quick lunch. The atmosphere feels like an Ikea restaurant — bright, wooden, clean. We spent about €37-38 for two, eating well. Perfect for a casual lunch.
Dammi Sushi in Milan sets the benchmark for all-you-can-eat sushi with its creative dishes, high-quality ingredients, and exceptional signature plates like the tuna millefeuille.
