Its name is widely believed to derive from the French term "surprise," referencing the hidden core of melted mozzarella that appears when the croquette is bitten into. The classic supplì is made from risotto—typically cooked with tomato sauce, peas, and ragù—that is shaped into a cylinder or oval, stuffed with a piece of mozzarella, breaded, and deep-fried until golden brown.
