Supplì is a traditional Italian fried rice croquette that originated in Rome during the 19th century. Its name is widely believed to derive from the French term "surprise," referencing the hidden core of melted mozzarella that appears when the croquette is bitten into. This dish is a quintessential example of Roman street food culture, commonly found in trattorias and alimentari throughout the city. The classic supplì is made from risotto—typically cooked with tomato sauce, peas, and ragù—that is shaped into a cylinder or oval, stuffed with a piece of mozzarella, breaded, and deep-fried until golden brown. A great version is distinguished by its crisp, crunchy exterior and a creamy, well-seasoned interior, with the mozzarella stretching into a perfect "surprise" string when pulled apart. Regional variations exist across Italy, but the supplì al ragù remains the most traditional Roman preparation. In other areas, similar fried rice balls are made, but they often lack the defining mozzarella core. Contemporary venues such as Pantera, with locations in both Roma and Milano, have helped preserve and promote the authentic preparation, ensuring supplì remains accessible to both locals and visitors.
